Dinner is Served



  This week my meal plans were not complicated. I try to leave the complicated meals to the professionals or a holiday. 

  This week I pulled out the slow cooker, used leftovers and followed the meal plan for the week.

  I find my recipes in a variety of places but this week everything came from the internet.  My biggest goal was to use leftovers items I bought last week.  I succeed. So yeah no waste for me!

Each week I try to make new recipes and not just stick with old tried and true ones.  I have made this soup before but the other two recipes were new.  Two days of leftovers from last week was nice too.  

All of the recipes were easy and everyone liked all the meals.  No complaints means these recipes can go in the rotation to be made again.

  Now the weekend is here and the kitchen is closed.  It's everyone for themselves! Have a great weekend everyone.

Monday Motivation (Dinner Mealplans)



   Since my week was off a little bit and I skipped Fridays meal and made it Saturday I have leftovers and will eat them tonight and plan the rest of the week after that.

  I also have some leftover veggies bought for last week that I will use this week to avoid  wasting anything.  You will see meat this week as I am not a vegetarian but, do enjoy eating meatless meals sometimes.

Feeling Productive



 So this week my meal plan was meatless all week.  I actually made it through the week following the menu minus yesterday but finished it off today.

  I had the ingredients on hand Monday but had to go to the store and pick up the rest of the weeks ingredients.  Spent $85 on the weeks dinners!

  All the meals were delicious and worthy of being kept in the recipe files.  Some  definitely need to be doubled or have a side added to it but most of them were filling!  If you see any meals of interest you can find the recipes here.

Monday
Bean burritos.  This was a nice easy and fast Monday meal.  

 Tuesday
This pizza was our favorite for the week.  I had never had Naan bread and adding just a few toppings over a pesto sauce was so easy.  This may become a lunch on the weekends AND my picky son even liked it.

 Wednesday
I like to use my spiralizer but I don't use it enough.  I also like shrimp and need to find more recipes to use them in.

 Thursday
Spinach filled lasagna.  I used to think making lasagna was a chore but, the filling was easy enough to assemble while the pasta cooked; so no complaints there!

 Saturday
Finally to end the week was a quinoa dish.  I have made quinoa in place of meat in a taco dish before and really like the flavors.  This dish had pinto beans in it too and all the flavors were great.

I surprisingly didn't hear any complaints at meatless day after day this week.  That was nice.  It could be that a complaint really wasn't worth it.  Dinner hot and ready on the table is worth it no matter what, right?

Monday Motivation (meatless dinner mealplan)



  For the last few weeks I have been sharing breakfast mealplans and this week I'm still sharing a mealplan but, a dinner one this time.

   This week I'm going to make my family all meatless meals.  Some of these recipes I have tried and obviously if they made this list they were tasty and successful the first go around.

  I am not going to label my days because I do have to go to the store and pick up some ingredients so depending on what ingredients I have on hand and when I go to the store will vary this mealplan.

Motivation Monday (Meal plan)




  When your a parent a family has to eat.  Gone are the days of a bowl of cereal or pizza every night.  I do plan meals because it makes the busy nights easier.  My recipes are a combination of recipes new and old as well as simple meals.

Last night we picked up a Rotisserie Chicken marked down for $3.  Mashed potatoes were whipped up as well as a side of corn!

2/12 Monday
Spaghetti and meatballs. I gave some leftover frozen meatballs that I will be using and combine tomato sauce, paste and diced tomatoes for the spaghetti sauce with a side of garlic bread.

2/13 Tuesday
Bajio Chicken from the crockpot.  This recipe is my favorite from

Are you Hooked on Tuesday?



  Today on the 30th of January I decided to take advantage of 3 deals.  Now for you I can at least maybe promise 2.  I went out for dinner and dining out is an expense but, if you do it right it doesn't have to break the bank (nor should it).  Welcome to my experience at Bonefish grill.

  I received several birthday treat's via local places and although you don't necessarily get to use all of them; some you definitely take advantage of right out the gate.

  I have enjoyed using a reward here and there throughout the month.  Some treats expire on your birthday, start on your birthday or others are available till the end of the month. Bonefish Grill gives you the month to use your freebie.


  Bonefish Grill offers you their delicious specialty Bang Bang Shrimp or a dessert for your birthday.  If you have ever been to this restaurant you know if your going to eat the birthday reward your going to also enjoy dinner.  There's no way I'm showing up for just that and not a delicious dinner too!

So deal number one!  I hope for your sake today was not the last day because if it is..... I am sorry!

  Hooked on Tuesday was today. I strategically planned to save money and dine out.  The deal gets you a 3 course meal starting at 15.9.  This includes a salad, entree and dessert!

Week 3 Recap


  I hit all my goals this week!  Yeah for being so productive but, that doesn't always happen which is why I'm celebrating.  You have to celebrate the small things.  Even if I only completed one thing I would have said good job and rolled over the other items.

1. I finished and start a new book! I am now onto book number 3.


  So far it's starting out good which always makes reading a book easy, right?!

2. My new recipe of the week was Swedish Meatballs. 

They were ok.  I didn't make the meatballs by hand so I cheated a bit but, I wanted a little more flavor so I will try again.


3. I have a few posts figured out for next week.  That's good enough for me.  Having a direction is better then not.

4. The nails did get painted as well.

5. Lastly my fitness goal was met.  I wanted 15 cardio miles.  With inside lap miles, my job, the elliptical and the spin bike my miles were over 40 miles.  For 2 days of cardio machines I did 15 miles alone. 


I'm going to need to up that numbers!

  Overall my goals weren't that hard but not all goals have to be.  Goals just have to be something you work on accomplishing.  The meal was a benefit for my family.  The book, nails, fitness and blog were for me! 

  Maybe I will work on adding goals for specific reasons or people.  A new week is coming and there's nothing else to do but get ready for it.

Dinner Collage


  This week is going to showcase my dinners from the last week or two!  I didn't use to make "real" food for my family.  I cooked what I knew and repeatedly cooked only that such as spaghetti or baked pork chop and potatoes and boxed food.  I never tried new recipes and everything was meat.

  I have come along way between using my food processor, spiralizer recently and the slow cooker.

  I now cook from my pantry and grocery shop every few weeks.  I incorporate meatless meals into each week and serve salads and soups as a meal!    My family likes the variety and my skills just improve along with my confidence daily!

Weekly menu 9/4-9/8



  As I made my menu this week I thought to myself what's my favorite food.  Can I eat that all week?  I mean beyond pizza.  Can I eat chicken everyday for a week even if I change the dish?  Meatless meal everyday?  No even with a different vegetable and starch, mushroom instead of pepperoni and meatless spaghetti and meatless chili I still like to taste something different the next day.

Weekly menu 8/29-9/1



  This was last week's Fiesta Ranch Chicken Pasta meal.  It is well liked in my house but this time I changed a few things and it wasn't as appreciated.

  This week I'm so excited for my meals not because they are all new and offer a variety of different flavors but because I get Monday off and dinner out!

  I did receive some vegetable special pasta that I will be incorporating into my meals if not this week next week for sure! We shall see how the family reacts to that!

Weekly Menu 8/21-8/24



  This shrimp plate was from a couple a weeks ago but, I may have to put it on the menu again soon.  Everyone liked it.

  This week I guess pasta is the word of the week.  Although one day I'm going to try to make the Zucchini pasta!  I did a run through of my pantry items think I have my ingredients organized for this week and next but, for some reason I'm second guessing myself so we shall see.  I'm not sure I'm feeling the days I have specified but that's ok. The menu is planned and I can switch the days around because the hard part is over.

Weekly Menu 8/14-8/18



  Last week I made all my planned meals except for the vegetarian chili on Thursday.  I would normally carry over the meal into the next week but I'm missing a few important ingredients too so I'll put that back into the pile.

  This week I'm only making 3 meals because there are enough leftovers in the house to feed us for a couple days.

Meal plan 8/7-8/11


  It's that time again to organize what's for dinner!  I don't create recipes for me it's just easier to research recipes and raid the pantry.  Each week I try to make a meatless meal sometimes it turns into 2 days and that just a coincidence.  I might not even he 100% of the ingredients but I make the meal anyways.  A crockpot meal once a week is a nice break and of course so are leftovers!   Sliding in a new recipe is always fun to spice up the palette too!

8/7 Soup and leftover salad:

8/9 Chicken:

It's time to eat! Meal plan 7/31- 8/4



  A girls got to eat and a mom has to feed her family.  I know it's easy to fly through the week when you have a plan but, it's not easy to make the plan!  Plus it's soo frustrating when you have picky eaters that veto everything but I just push through.

  Tonight's meal was a winner because you can never eat enough breakfast.


Breakfast is the one meal I hear the least amount of complaints about so if we ate breakfast twice a day everyone would officially eat in my house.

Thank Goodness Tomorrow is Friday



   New series.  Let's see where this takes us.  I'm going to sit back and picture a nice calm sea blue room, the ocean soundtrack is playing softly in the background and I can feel the sun warming my back.  On Thursday I will picture a nice, productive Friday and maybe there after and we will see what happens.

  I would like to have dinner planned and ready to eat before 6!

  I would like to paint my nails!

  I would like to catch up on the Vikings series!

  I would like to drink 8 glasses of water!

  I would like to go to the gym!

  I would like to ...... free space (a bonus freebie for me)!

  So technically another name for this post could be wishful thinking.

Thankfuls



  Today even though it's a holiday a break from work and school consists of busy! Today you work more in your house then any other day.  You clean, you cook, you eat and wash.  Your lucky if you get a nap in and avoid a belly ache.

  Thanksgiving usually starts early and depending on your company may keep you up late into the evening.  Regardless of the length of you day; I hope you gave thanks to at least a small part of it.

I am thankful for:

 1) My mother spending time with her grand kids.

2) Kids spending time with their grandmother.

3) Great food all edible and not burned.

4) Little ones helping with stuffing.

5) Big ones helping with potato peeling and dishes.

6) Watching Macy's Parade.

7) Pumpkin Pie.

8) No serious melt downs or chaos.

9)  Family movie of Home Alone and no kid movie of National Lapoons Christmas Vacation.

10)  A happy and content family at least for one day!

Thanksgiving Eve

  The night before the feast!  Another checklist comes out.  First checklist this week was groceries.  Now it's about the meal plan. 

What's being made, what time it's getting done, or when it needs to be done.  It's essential to get all the ingredients organized the night before when the stores are still open to grab something last minute.  Don't forget that main ingredient no matter what it is.  For us it's the turkey!

Turkey getting that bird in early for a late lunch! 

It really doesn't matter how big it is.  My family will eat it all.

Potatoes will accompany the meal!


Mashed potatoes please and lots of butter.

It's what I grew up eating so it's what we will still be eating!

Cranberry sauce the jelly kind because I hear less grumbles from the kids.


I swear this is the best treat on the holidays.

Gravy.

Not a fan but others are so I aim to please.

Sweet potatoes for little ones that don't realize it's a vegetable!


Of course if you add some brown sugar and marshmallows doesn't that make it a dessert?

Rolls because one child only functions on bread.

Stuffing another childhood favorite.  Homemade and simple.

Lastly, Pumpkin Pie because it's necessary!


Pie done, the rest will get made tomorrow!  Have a Happy Thanksgiving to everyone celebrating.  Be safe, thankful and enjoy!
