Monday Motivation (all about food)




  I like to cook.  I like to bake. I am not a professional but, since we have to eat and sometimes it's an enjoyable experience we do it.

  Today I was super motivated and made 3 things! Now as I stated I'm not a professional so I will also share the recipes of the items!

  I think the one thing I have on my side at least is that 2 of the 3 are healthy.  The bonus is that everything is kid approved.  As a mom of picky eaters that just makes me so happy!


I started my morning with a cup of hot mint chocolate.  This was a fun recipe with its green color and I even choose to make one red in honor of the upcoming Valentines Day! Easy recipe with minimal ingredients and tasty!

Next up was a healthy spin on cookie dough bites.  I would never try to make cookie dough healthy but, I would try to make my kids eat healthier.  Guess what 1 out of 2 kids fell for it. That's OK thats a start!  This cookie dough balls although made with chickpeas are actually quite good.  I guess there's enough sweet stuff in them to kind of coat the taste.  I thought they were a little dry but, that just means we need a class of milk with our cookies!

Lastly we not only needed some chocolate but we needed a dessert.  Enter the chocolate brownies!  Since I was on a healthy role I decided to stick with it.  This recipe makes a nice moist cake like chocolate brownie.  2 kid approved on this one!

  Now I'm not saying get our of hand and make everything on Monday but, I am saying if your going to make something, make it a little healthy and a lot of good!

Beans in the Brownies (pinterest challenge day 13)



  First off if your following me on Instagram you should have already seen my video if not jump over there for a short interrogation by my child.  She knew we were going to have brownies today but was not too sure about the use of beans.  I tried to tell her we had them before and all was well but she didn't remember probably because I didn't tell her about them.

  My challenge today was bean brownies!  Why not!  Do you think the more I actually let them know what's in their food the more likely they are to actually try it outside of what I cook it in?  Hmm, your probably right, probably not.  So until then I will randomly feed them goodies with veggies.  I look forward to the day one of them wakes up and says hey mom I'm feeling really healthy today what happened.

  There are so many options you can choose on Pinterest.  You can search just brownies but I selected bean brownies.  That was the easy part after that you have to scroll through dozens of option until your content with one.  Sometimes this is easy based on ingredients I have on hand, 3 ingredient recipes, no bake, or quick preps.  So many choices.  Lucky for you, you can always add them to a board or just like it so that it's saved for another day.

  Todays recipe was brownies with beans.
 

I added the batter to the pan and let the kids smell it before I put it in the oven.  I asked what it smelled like.  They could identify chocolate as they searched to see the beans.  Everything was run through the food processor so there was very little proof of them in the batter.


Brownies done and cooling.  They spent 18 minutes cooking and making the air smell delicious so when they were done, you couldn't help but want one.

Supper easy recipe.  Everything goes in the food processor then poured in the pan.  The texture was the same as a traditional brownie.  The flavor was high in chocolate and no bean flavor at all.  The kids saw the whole process and still couldn't be stopped or slowed down with the beans. Chocolate trumps beans.  10 minutes of resting and I served up a piece to everyone.  The chocolate was still gooey and melted on your fingers.  2 kids loved these brownies and wanted more so you know what that means? #Pinterestwin!

Baking day and pumpkins

  Today I had a mission for my pumpkin consumption.   Come on now people we all have different goals don't judge.  I knew I was going to make something it was just a matter of what.  I have a couple recipes I want to try.  Some cookies for sure! I have two in mind already.  I also would like to make a pumpkin flavor granola as well as oatmeal.  After those few recipes I have no goal.  I would like to whip up at least a couple savory dishes as well.

  Today I made pumpkin brownies.  I was able to use the rest of the can opened from the smoothie so that was nice. I won't be able to utilize one can for two recipes often.

  I didn't hear any complaints from the household about this brownie.  It was a nice spin on a chocolate brownie.  It had the same texture as I like in my favorite brownie.  Chewy but soft and moist.  Not cake like at all and the chocolate chips when eaten warm were nice pockets of extra goodness.
  This would have been just as good topped with a scoop of ice cream because hey if your going to treat yourself why not add on a little more.
