Monday Motivation (Breakfast Mealplan)



  Breakfast is my motivation again this week.

Monday: We had donuts.  Not homemade. The store bought kind.  Of course there were no complaints only fights over how many each of them could eat.

Breakfast with Strawberries Day 2



  This is my favorite oatmeal.   I was looking for a strawberry and cream oatmeal similar to the packets but one I can make from scratch and came across this.

You mix milk and water together so I believe that helps the oatmeal to be creamy.  As just water mixed with oatmeal does not enhance the flavor at all.

The topping for this oatmeal is simple and also adds another tasty and creaminess to the oatmeal.

 A dollop of sour cream or yogurt and a handful of strawberries top this bowl of oatmeal making it a nice sweet, flavorful bowl of warm delicious breakfast.

Pumpkin Day 7!

  I have experimented twice with my own recipes containing pumpkin today.  I am not going to count them until I get them passed through the children.  I made an attempt at ice cream and the other was popsicles.

  To blend pumpkin into spoonable goodness is a science. Nutmeg, cinnamon, cloves, pumpkin pie spices and maybe ginger.  I know those can be added to the pumpkin mixture to make it better but I haven't gotten the right proportions figured out.  An apple uses the same spices but an apple also atleast starts out good so you can build on that.  Maybe by the end of the month I can build a nice pumpkin basic mix to build on! Until then I found a new recipe!


  These are like the no bake energy balls.  It has very few ingredients and all of the ingredients are natural and healthy.  This is so easy your kids could make it.  I did skip the powdered sugar coating as I didn't think my kids needed it.  I wanted it as a healthier snack but by all means I'm sure it tastes extra nice with it so you could try that as well.
  The end result is a perfect afternoon snack.  Bite size pumpkin balls!  This recipe took a minimal amount of pumpkin as well but you can taste it and it was good and the raisins added a nice component in the oatmeal mix.  Now with the last two items in the freezer I have officially used up this can!  On to the next can!

Day 11 of 30

  Ooh I am so close to the halfway mark I am just excited for that!  Nothing to momentarily will happen but I will have made it and have a couple weeks to go!  Today I will say was a good day too.


  I got up early today and stayed awake instead of going back to asleep so this allowed a few more things to get done before the kids woke up and before we went to the gym.  I even got to the gym earlier today!  Breakfast was a peach and cream oatmeal.  It was very creamy without the flavor of cream but very good I must say!  I did skip the topping which would have probably fixed that problem.  I used fresh peaches which when cut up and cooked in the oatmeal it exploded with juicy goodness when you bit into it.

  Lunch was leftovers from Outback. Steak and potatoes.  I  usually very bad with leftovers.  I will eat out and bring the food e and not eat it then weeks later different I out to eat.  Even food I have made at home doesn't necessarily get eating within a specific time frame.  But I have eaten leftovers for a few days, yeah me and refrigerator.
 
  Dinner was again leftover pasta salad.  It's not even close to gone yet.  I think it still has a few more days to it.  But I'm still pleased with how it tastes even though it was way better the first day.  The beans when cooked split open and almost taste like chicken.  The peppers are not as delicious but as a leftover it's really not that bad.  To accompany the salad I made a salmon.  As you have seen the last few days I have eaten more whether it is because of all the extra exercise and activities I am doing and burning off or I'm just hungry.  It may also be a phase and taper out.  This salmon is one of my favorite ways to eat it.  I do enjoy salmon and eat it a variety of ways.  This recipe however makes this delicious crunchy flavorful top with walnuts and ahhh, breadcrumbs.  I used Panko today but have used regular or homemade before.

Day 3 and I tried it! (Recipes included)

  Today was much better as I reflect on it now.  Isn't it funny when your in the middle of the day you can't appreciate it until it's over?

  This morning we choose oatmeal for breakfast  (young chef helped with this).  She even declared what was for breakfast and what kind of oatmeal she was going to have. Cinnamon roll oatmeal it was. Mine was just the cinnamon and not the roll, lol.  Which consisted of mine without the white cream (powder sugar and milk).


My lunch consisted of a bowl of fruit.  I don't think I have ever eaten as much fruit as I have now.  There's multiple good things resulting from this.  It's good for me and it's less produce I am throwing out.  I didn't throw out a lot but I did throw out enough that was very unnecessary all due to my poor planning.

Dinner was sloppy Joe's made with ground turkey and I used lettuce in place of the bread.  I was pleased with how good it was.  This meal was accompanied by carrots and homemade baked fries!  

I managed another 100 oz of water.

My workout consisted of 33 minutes on the elliptical and various weights to include a focus on abs.

We had dessert tonight too see separate post!

My daughter the chef in training

  I am going to help my youngest daughter learn some skills, become self sufficient and better herself.  I am going to give her lessons to prepare, cook and bake.  Along the way we will reiterate measurements, time, different food items, and hopefully taste everything because she made it!

  Our first cooking lesson recipe was for breakfast.  I must admit the recipe is not new to us.  We have enjoyed it before she just has never made it before.  I guess starting with a acceptable meal is a good start.

  We briefly discussed measuring cups and spoons.  They are all different and they hold different amounts.  Some hold liquid and some are better for solids.  Some recipes call for small amounts so we just use spoons.  All of that is very easy for a child to understand.  The whole cup, half cup quarter cup will catch on eventually, lol.

  Kitchen safety will be addressed every time we cook also.  She may not always cook but she needs to understand how to be careful around hot things: pots/pans, stove and oven.  Knives which are a long way off.  Even various electronic appliances such as a blender or toaster.

Strawberries and Cream Oatmeal is what she made!  She measured out her oatmeal.

Then added her milk.

 Cut up her strawberries very carefully (butter knife).
 Waited ever so patiently for it to cook
Stirred her strawberries and sugar together.

Then after adding a spoon of sour cream and strawberries on top it was ready to eat!
