Week 8 Goals



  Let's get ambitious this week and aim high!  No, don't we do that already? 

1.  Finish 2 books!


2.  Fitness: 25 miles, 4 classes

I like TRX I just struggle with the time.  I like all types of cardio but, to meet 25 miles of accountability I need to stick to machines because I don't have a fitbit, lol.  So if I choose to swim or even dancing those are free unaccounted for steps/miles 

3.  Cleaning: freezer

4.  Make a snack for the week.  I'm thinking granola this week! This is my favorite recipe.


  I'll stop at 4!   Anything after that will just be a freebie!

Day 4 Pumpkin

  It may be late but it's too early to give up on my 30 days of pumpkin consumption!  I didn't want to count a pumpkin coffee and donut that I ate again.  That is not what this is all about.  This challenge is about me making, baking or cooking pumpkin.  So I made for today Cinnamon Pumpkin Granola!  We eat a lot of granola and oatmeal here so I am never short of it!


  I found the recipe to be easy.  Granola recipes come in a variety of skill levels as well as ingredients.  This recipe although took a very small amount of pumpkin (3 Tbl) it did require ingredients I had on hand.

  I think I mixed this up quicker than it took to cook, stir,cook stir.  With granola you have to babysit.  Over cook it and it's hard as rocks under cook it and not stir it around you get flavored uncooked oats.  Neither of which sound good to me.

  I did stir a little harder and as thorough as I could as I cut corners and didn't make a wet bowl and a dry bowl.  I was confident that it was mixed though.  The you lay it down on the cookie sheet to bake.
  I can not even begin to tell you how good it smelled.  All the children let me know how good the granola smelled.  Sometimes food is the best potpourri!  It quickly covered up the cabbage scent from dinner.

  Granola is served. Pumpkin to be exact!  If you look closely you can see shredded coconut.  It's taste like pumpkin. Surprisingly with such a small amount of the canned pumpkin.  I probably will not mix anything else in it but it will get sprinkled on a bowl of yogurt or in a bowl for dry munching!  I want to work on making clusters.  I'm never very good at that.  Cheers to the pumpkins!

Young chef is back

Today she made granola.  She did assist me in cooking soup as well but her real focus was on the granola.  She is gradually getting better.  You take advantage of your knowledge in the kitchen but teaching someone is entertaining.  We talked about pots and frying pans and cookie sheets.  I pointed out the different measuring utensils again and she nods her head as I go through everything.

We discussed what we were making.  She ran around the kitchen to get the items she could reach. Introduction to the cookie sheet.  I guess it looks different without cookies.
 
We always start with washing our hands and she gets her stool out to reach the counter and to turn the oven on.  I show her the degrees to set the oven and she has to punch the number so set the temperature.   She also needs to set the timer after I show her what that is.  I let her grease the pan. That will take some practicing.

This recipe needed two ingredients melted together which I watched on the stove.  She mixed and added her dry ingredients.
Squeezing wasn't too bad.  But I needed to remind her over the pan.

 She has stirring down.  Meaning everything stays in the bowl.
She tasted coconut and decided it was good enough to add to our granola.

She then dumped it onto the tray and leveled it out! Slowly is the key word.


We added chocolate chips to the granola after I took it out of the oven.  The granola was still warm so they melted into the mixture and we may add more to it along with craisins for some more texture.
She sampled it and declared it good.  I know she will eat it with some yogurt tomorrow.
You know I am about easy recipes, so don't be intimidated.  Give this a try and make a parfait.  Good with a bowl of milk too I'm sure.
