Monday Motivation (breakfast mealplan)
Let's do another week of breakfast. Breakfast meal plans are super easy for me. I usually have all the ingredients for multiple meals, it's one meal that is appreciated by everyone in the house and I like the start of a new day.
Monday: pancakes

No recipe necessary! Just keeping it simple. I would even make an omelet but, the little people won't eat that.

Monday Motivation (Breakfast Mealplan)
Breakfast is my motivation again this week.
Monday: We had donuts. Not homemade. The store bought kind. Of course there were no complaints only fights over how many each of them could eat.

Monday Motivation (Breakfast menu)
They say breakfast is the most important meal of the day! Who am I to question that? So I will just eat it and go on with my day.
I have found that we can stretch milk by adding hot meals to our week. The kids don't complain about cereal everyday but a little variety is nice. Thankfully most breakfast items are eagerly accepted.
This is our breakfast meal plan for the week!

Planning breakfast doesn't have to be hard. I think it's way easier then dinner plans but, that's not the point. The point is planning makes life so much easier, offers variety and challenges me with new recipes sometimes.

Healthy Muffins (pinterest challenge)
So you know how your having a good day until your kids have plucked your last nerve. Well I got them back today! It seemed like I had to tell them multiple times to do several things today. All of this during our celebratory dress like a cow at Chick Fil A and even after. I even let them play on the playground.
Todays dinner was an easy one. Hotdogs, mac and cheese and a side of carrots. Only one of those is acceptable by the children. However due to lack of time to eat ice cream at lunchtime the negotiation was all dinner had to be eaten before the ice cream was consumed. One point for mom for that plan. One poor child was compliant!
Enter my devious plan to get those children. Pinterest Challenge for day 12. Muffins!
Spinach muffins! I'll show those kids. The green I was concerned about but they are always trying to steal my pistachio muffins so I thought I was ok there.
While they were napping I made this batch and worked quickly to get them in the oven before my plan was blown. I had to make the dry ingredients bowl was complete before I turned on the blender.
Look what else gets thrown in! Bananas!
All the dry ingredients got mixed with the wet mix from the blender then scooped into the muffin tray.
They smelled amazing when they were cooking. I m not sure if it was the bananas or the cinnamon. Even when one child came down she said how good something smelled.
Can I have a muffin, momma? Yes, yes you can honey! Can I just saw that was the first thing she took a bite of too. She even let me know it smelled better up close. However I did get multiple questions. Why's it this color? Are there chocolate chips in here? What kind of muffin is it? A good one that's what kind it is, lol.
Who cares if it's a pea green unattractive color! This momma just fed her kids a muffin with bananas and spinach in it. Hehe I feel almost evil.
I would like to reduce the sugar (3/4 cups) and maybe up the spinach and bananas to make it a wee bit healthier. The recipe was really easy to make. Blending everything in a blender makes the mixing easier. The recipe did have a quick prep time too. I would have to say with 2 kids (other child ate one and tried several times to try and steal another) wanting second muffins this is a #pinterestwin!

Strawberry Muffins
I am a morning person. No matter when I go to bed it may be a slow start to get up but I do get it going quickly thereafter. So I have no problem making, baking, cooking breakfast. I like to cook but dinnertime is so late in the day it's more of a nuisance.
Breakfast with strawberries. If your following me you know I do not make my own recipes. Maybe one day but not yet. Instead I search that world, wide Internet until I find one that sounds good but, not necessarily easy.
Todays recipe comes from Sugar and Soul. A delicious muffin filled with strawberries and topped with a crumb topping. A delicious, sweet, moist muffin. Did I say delicious?
This recipe was easy with a little bit of some flare. The crumb makes it look sophisticated and puts the appearance of your already delicious muffin on a whole new level.
I like when a recipe challenges me. This one allowed me to make the buttermilk. Not a real challenge as I know the ratio by heart but it allows me as a home cook to feel a little better about how far my kitchen skills have come.
Always make you buttermilk first and set it aside. There are a few ways to make it; find which one fits you and set it to memory. Why buy it when you can make it?
Mix your ingredients, chop your strawberries
Fill your muffin tray (love my silicone cups) with the muffin batter,top them with strawberries
and cover with crumb!
Bake and be hold the beauty of an easy home cooked, sophisticated muffin!
Good to the last crumb!

Apple Muffins
We are still working on making our apples disappear as well as meet my pumpkin challenge so after an internet search and some voting amongst the children we decided on muffins. This also was made after the pumpkin brownies so does that mean we were extra motivated in our kitchen?
Apple Streusel muffins! I even had a helper in the process! She helped with the topping.
I used Jonagold apples and it didn't even take the whole apple and still seemed to have enough apple bits in it.
This was a good recipe for the teen to learn about wet and dry ingredients, how to make a separate topping and why I always have so many dishes.
The mix looked so good after we added the apples.
I used my silicone cupcake holders. I love these things. Even though I still wash the muffin tin it doesn't get half as dirty.
The finished product was good. Little bits of apple just about in every bite. My picky 2 yo whom won't eat an apple at all ate a couple of these. Does that count as his quota for fruit?
I like muffins. A nice reasonable snack that you can play around with and make it your own. Very portable and most kids will munch on them too.

Semi-hot breakfast
I love breakfast. It's not that I love mornings it may actually be that I love food. But I also love to cook/bake. Therefore in my house breakfast is more than just a bowl of cereal everyday. In fact we have a bowl of cereal maybe twice a week. Once on a lazy weekend day and another during the week sometime.
This morning we had banana muffins. I buy alot of bananas and we seem to speed eat them randomly. So one week I run out of them the next week they are left to spoil. Well everyone knows that almost spoiled bananas are the best to bake with so that's where some went that I threw in the refrigerator last week.
This recipe was an easy yet delicious recipe. I have made this recipe before which is not a bad thing and they are good but, I will look for another now. This recipe is great to whip up if your minus a few staple items. This recipe doesn't use milk! However it does take eggs and yogurt.
I even used my awesome butter sample from bzzagent. Which oh the smell of melted butter is a good thing too! Thank you Land O' Lakes european-style-super-premium butter.
The prep of these muffins were quicker than the 20 minutes of cook time. So whip these up for a nice warm breakfast, sit back read a chapter then indulge! Your family will thank you. I did cut back on the sugar and didn't even use all the required bananas and everything turned out fine.
